Black Chickpea Salad

This delicious salad brings some of the staples of Indian cuisine together – chickpeas, potatoes and wonderful spices! Quick and easy to prepare, it makes a wonderful side to virtually any dish! 


Ingredients:

Salad

2 Cups of Black Chickpeas
(Soak the Chickpeas overnight )
1 Boiled Potato
¼ Red Onion
½ a Cup of Cilantro and Mint(not packed)

Dressing

2 inch ball of Seedless Tamarind
(soak in hot water for 15 minutes)
2 tsp Honey
¼ tsp Chili
¼ tsp Cumin
Salt to taste


Preparation:

Salad

  • Take the soaked Chickpeas and boil for approximately I Hour till done, drain
  • Cut the boiled potato in cubes and add to Chickpeas
  • Chop onion, cilantro and mint and add to Chickpeas

Dressing

  • Smash and then strain the tamarind through a sieve
  • Add honey, chili, cumin and salt to the tamarind liquid

Dress the Chickpeas with the tamarind dressing, toss lightly, serve warm or cold!
