Dum Ka Kheema Recipe

This has tremendous flavor and is like a kebab, I like it best either with nan and a simple onion tomato mint salad on the side or with rice and a sour lentil dish made in Hyderabad called khatti dal.

Ingredients:

  • 1 Pound (453.59 g) minced Meat(chicken, beef, turkey, goat, lamb)
  • 1 Tbsp Charoli (Buchanania Lanzan- an Almond-like flavored seed) – OR substitute Almonds for Charoli.
  • 1 Tbsp Peanuts
  • 1 Tbsp Poppy Seeds
  • 1 Dried Coconut Piece about 2”
  • 3 Pods Cardamom
  • 1/2 Tsp Garam Masala
  • 250 g Onion OR 1 large
  • 125 g Yogurt
  • Whole Chili Peppers to taste
  • 1/4 Tsp Turmeric
  • 1 Tbsp Ginger Garlic paste
  • 1 Lemon
  • 1/4 Cup packed Mint and Cilantro finely chopped
  • 6 Tbsp Oil
  • 3 Tbsp Ghee
  • A piece of natural Charcoal

Method:

  • Slice Onion fine and long
  • Take a pot and add all the Oil
  • Fry the Onions till golden brown
  • Spread the fried Onion on a kitchen paper towel and let it cool down, it will turn crispy
  • Crush the crispy fried Onions and keep aside
  • Take the Charoli/Almonds, Peanuts, Poppy Seeds and Dried Coconut – Add to this ½ cup water and blend till it’s a grinded creamy paste, keep this on the side
  • Remove the Cardamom husk and crush the seeds of the Cardamom, keep aside
  • Juice 1 Lemon and keep aside
  • Take the minced meat and add Ginger Garlic, Salt, Turmeric, paste of Charoli/Almonds Peanuts and dried Coconut , crushed Onions, Chili Peppers powdered Cardamom, Yogurt, Garam Masala, half the Lemon juice
  • Mix everything together
  • Keep it aside for ½ hour to an hour
  • Take the same vessel or the oil used to fry Onions and heat
  • To this add the mixed minced meat with spices
  • Cook till nearly done, then add the Mint and Cilantro
  • Cook till completely done
  • Put the peel of Lemon or Onion in the center of the pot
  • Take the Charcoal and heat over open flame till it has caught fire.
  • Place the burning piece of charcoal on the peel of Lemon in the pot
  • Add the Ghee on top of the charcoal
  • Very swiftly close the top – seal it with a cover or foil to trap the smoke
  • Open after 15 minutes
  • Add the balance of the lemon juice
